BEET Hummus for Coconut Chips: Be Coconut Canada

Everyone knows how hard it is to put down that bag of Be Coconut Chips! Here’s another reason to keep on crunching: Beet Hummus Dip that you can dip your coconut chips in all day long.

The recipe is simple, nutritious, and super delicious!

Ingredients:

  • 2 large red beets
  • 2 cloves garlic
  • Juice of one lemon
  • 1 can of chickpeas (400ml)
  • 1 tsp Sriracha hot sauce (optional)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Be Coconut Chips
  • Crackers
  • Fresh thyme or dill for garnish

Directions:

  1. Roast or boil beets until soft in the middle (skins on)
  2. Let beets cool and wipe skin off with a paper towel
  3. Combine chickpeas, garlic, Sriracha, olive oil, a pinch of salt, a pinch of pepper, and lemon juice in a food processor
  4. Puree, add beets and continue to puree until smooth (add olive oil for smoother hummus)
  5. Add salt and pepper to taste
  6. Let chill in the fridge for 1 hour
  7. Serve with Be Coconut Chips and crackers
